I notice that in a few exercises, when the right move is to promote a pawn, I can't choose what piece to promote it to. Why is that?
You have found a "bug", a small error in how the Exercises work. Currently, any exercise that requires you to promote a pawn will automatically promote the pawn to a queen. If any exercises are added that require you to promote to another piece, we will correct the bug. Until then, whenever the right move is to promote the pawn, you should promote it to a queen, and the exercise will do this automatically.
